I love this simple pie and with spinach growing in the garden and eggs from the chooks it does not cost much to whip up either.
4 rashers of diced bacon
1 tsp olive oil
1 diced onion
200g spinach
1/4 cup cream
4 eggs
1 sheet of puff pastry.
Preheat oven to 220 deg C.
Grease dish and line base with puff pastry.
Mix other ingredients and pour in.
Bake approx 35 mins.
Is the bacon pre-cooked or left raw?

ReplyDeleteI cooked the egg & bacon pie though I have not eaten spinach since childhood & I think due to tears,not even then.
I must say trooper (uncle John) ate two helpings & took the remainder for lunch, it was worth the cook & eaten without tears, I am a big girl now.
I added a puff pastry lid as all I could see was spinch, there didn't seem to be enough liquid unlike the picture you posted,regardless it went down a treat & was appreciated.
