Cookie Cutter Biscuits


A plain biscuit recipe we use when the children want to play with the cookie cutters.

300g Plain flour
1/2 tsp baking powder
pinch salt
115g butter
200g caster sugar
1 egg
2 tsp vanilla essence

Option icing and colouring to decorate.

Sift flour, baking powder and salt into a bowl.
In a separate bowl beat butter and sugar, then add egg and vanilla.
Stir in flour and knead lightly. 
Divide dough in half, flatten slightly and put in fridge between parchment until firm.

Preheat oven to 175degC.
Roll out dough between two lightly floured parchments sheets until the dough is about 5mm thick.
Cut out cookies and place on baking sheets.
Bake for 8-10 minutes.

Makes a lot, and they store well for a week in an airtight container.
The kids can have fun decorating them as they wish as well.
