Ginger Nut Biscuits


Yesterday I had a rare Susie Homemaker episode complete with nice dress, make up and an apron.  To give you an idea of how rare* this is Possum looked at my apron and then said 'wow, who gave you an apron?'.  I have owned it since before she was born!

These are great biscuits, everyone here gives them a big thumbs up and given it has been a long time since I posted a recipe I thought I would share it while I still had biscuits left to photograph.  These biscuits use less sugar and butter and a lot of baked biscuits so I like to pretend they are healthy (ha ha, maybe if I ate less of them...).


Ginger Nuts

2 cups plain flour
1 cup castor sugar
1/2 tsp bicarb
1 tsp cinnamon
pinch salt
2 tsps ground ginger
100g butter
1 egg
1 tsp golden syrup
hot water as need to form dough

Sift flour, sugar, soda, ginger, cinnamon and salt.  Rub in butter and mix in syrup and beaten egg.  Mix into a firm dough adding water as needed.  Roll into small balls and flatten very slightly with a fork.  Cook at 180 deg for approx 15 minutes.  Cool on tray before moving to rack.



*I do bake often enough, just not usually in a dress and apron.

  2. Delicious Susie Home Maker. My guys still look at me sideways when i don an apron, they know it means baking goodness but why do i have to 'try so hard'?? You've just reminded me i don't have anything for the children's recess tomorrow, time to get in to the kitchen for some baking, love Posie
